| Description: There are two varieties: cultivated (~ psɨ́m) and wild (~ cáŋ ‘bitter luffa’). People grow the cultivated variety in their fields. The vines do not climb tree stumps, but lie on the ground under the rice plants. They should be planted in places where people collect and burn the re¬maining branches and small logs after the first burning of the field. They are planted in April and May, and people eat them from the second weeding (hɛ́ɛl pɔ̀ɔy) to the rice harvest (September to November). This gourd is tasty, and people make stew, soup or chilli sauce from it, or steam it and eat with rice. The wild variety is small and bitter but can be eaten by people who like bitter food. They grow in the fields, and when people are weeding their fields and find a small gourd plant they pick a leaf and taste it. If it is bitter, it is this one, and they cut it off. Luffa stew (sə́ŋ tàŋ ~) is made like this: Fill a cooking pot with cold water and heat it, add roasted luffas, roast¬ed and torn green chillies, síi-pàay beans, lemongrass, basil straws, onion (sʔɨ́m) or chive (slɛ́ɛp) leaves, pieces of dried rat or squirrel meat and some crushed rice. Boil the stew for 20–30 minutes until it is ready, stirring it all the time. | ||
